B-Bread. Food that doesn’t need explaining.

I have a litre of excellent homemade pork knuckle stock. I want to use it as a basis for one week’s worth of cooking; budgeting should be fun, effective, and nutritious. List me one week’s worth of recipes, using the stock as a foundation, even a perpetual recipe.

Mr Mayor, that’s liquid gold. A proper pork knuckle stock gives you collagen, depth, body, and salt — perfect for building a week of smart, layered cooking.

Here’s a 7-day plan where each dish either uses the stock directly or builds from leftovers. Efficient, budget-friendly, zero waste, and deeply satisfying.

🗓 Week of Cooking with Pork Knuckle Stock

Foundation Day

Use: 300 ml stock
Add: Dried white beans (or canned), onion, carrot, celery, garlic, bay leaf, thyme, kale or chard.

Simmer into a hearty peasant soup. Finish with olive oil and black pepper.

👉 Make a big pot.
👉 Reserve 2 ladles for tomorrow.

Nutritious: fiber, protein, minerals.
Budget: beans are your ally.

Upgrade the leftovers

Take yesterday’s soup base.
Add: 1–2 good sausages (sliced), smoked paprika, a spoon tomato paste.

Simmer until rich and thick.

Serve with:

  • Toasted bread rubbed with garlic
    or
  • Polenta (made with half stock / half water)

Comfort with elegance

Use: 400 ml stock (dilute if needed)

Classic risotto:

  • Onion
  • Arborio rice
  • Splash white wine (optional)
  • Warm stock ladled in gradually

Finish with:

  • Parmesan
  • Knob of butter
  • Cracked pepper

Optional: fold in leftover greens or peas.

Luxurious but economical.

Shift the flavor profile

Use: 300 ml stock
Dilute slightly + add:

  • Ginger
  • Garlic
  • Soy sauce
  • Dash rice vinegar
  • Chili oil

Add:

  • Noodles or rice
  • Soft-boiled egg
  • Shredded cabbage or spinach
  • Spring onions

Now your European stock becomes a ramen-style bowl.

Deep nourishment

Use remaining stock (or dilute what’s left).

Simmer:

  • Green or brown lentils
  • Diced carrot
  • Leek
  • Parsnip or potato
  • Thyme

Finish with mustard and vinegar.

Keeps beautifully. Excellent for lunches.

Budget brilliance

Cook oats or pearl barley in:

  • 50% stock / 50% water

Top with:

  • Fried egg
  • Leftover lentils
  • Caramelized onions

This is peasant food at its finest — deeply satisfying.

The rolling broth concept

Whatever remains:

  • Bits of vegetables
  • Herbs stems
  • A bone if you have one
  • Water to top up

Simmer gently 1–2 hours.

Strain.

You now have:

  • A refreshed broth
  • Or the base for next week

This is how old households stretched flavor infinitely.

🧠 Budget Strategy Notes

  • Beans + lentils = protein economy
  • Dilute stock when needed—flavor remains
  • Always cook grains in stock for maximum value
  • Save vegetable scraps during the week for the perpetual pot

🥣 Nutritional Advantage

Pork knuckle stock provides:

  • Collagen (joint health)
  • Gelatin (gut support)
  • Minerals
  • Natural satiety

Combined with legumes + greens = very complete diet.
