Ralf’s Sparkling Quark Breakfast Bowl

This is one of my healthy breakfasts, but of course I cannot just put quark in a bowl and be finished. No, no. There must be a little experiment. The low-fat quark is good, the protein powder makes it stronger, the blueberries bring the sunshine, and the sparkling water makes it lighter, almost like the quark wakes up in the bowl.

It is simple, but it feels like a small morning ritual. Not heavy. Not boring. A little fresh, a little sweet, and good for the body.

For one breakfast bowl:

  • 250 g low-fat quark
  • 1 small splash of sparkling water
  • 1 scoop protein powder
  • 1 handful blueberries
  • A little stevia, to taste

Put the low-fat quark into a bowl.

Add the protein powder and stir it in slowly. At first, it can be a little thick, like cement for very healthy people, so do not panic.

Add a small splash of sparkling water and mix again. The sparkling water makes the quark smoother and lighter. Add only a little at first, because you can always add more, but you cannot take it out again. This is the same in cooking, in engineering, and sometimes also in life.

When the texture is creamy and soft, add a little stevia. Taste it. If it needs more sweetness, add a little more, but not too much. The blueberries will also bring sweetness.

Stevia is a natural sweetener made from the leaves of the stevia plant. It tastes very sweet, but it has almost no calories and usually does not affect blood sugar much, so many people use it instead of sugar.

Fold in the blueberries, or put them on top if you want it to look more beautiful. In my kitchen, sometimes it looks beautiful, sometimes it just tastes good. Both are acceptable.

Eat it fresh, preferably in the morning, when the day is still quiet and the coffee is somewhere nearby.

The sparkling water is the trick. Without it, quark can be a little heavy. With it, the whole thing becomes lighter, softer, and more alive. It is still healthy food, yes, but not punishment food. It is breakfast with a small smile.
